In the in-game modhub, you'll have the option to view screenshots of the mods, as far as maps go, just download what you deem interesting. in fact, that goes for all mods. Because if you don't like the look of a certain map or mod, then there's no need to download it either.

Don't fill up your harddrive space with stuff you won't be using anyway, just have a scroll through the categories and download the things you're actually interested in

I have an old intel laptop that has no GPU, easy had 2500+ mods (for like fs15/19) and never had lag issues because of mod amounts Ingame ever, but it did struggle when the vehicle count hit high especially on larger maps

Well... grapes are basically just vines, & olives are basically a short tree; the way they are both harvested is just by a gentle vibrating motion on the fruit producing leaves. So water might not really effect it there.

Root crops seem like they should be affected since water + dirt = mud.

Depending on how aggressive the sieving system is, it could account for accumulated debris.
