Age gaps aren't that bad imo as long as it's not between an underaged person and an adult (or any incest but that's also implied) like they're an adult, they can choose who they want to date and conversely if a person thinks that two adult characters would have great chemistry it's not that bad unless they're being creepy about it being an age gap (Example: lot's of webtoons that fantasize about an older man being a father figure and lover to a character. Ew.). Like Jolyne and Weather is a common ship and Weather is a year younger than her father. I personally don't like the ship but it's not that problematic if you think they have good chemistry from their experiences. Then again its more commonplace to have similar age ranges in characters if you want them to have a relationship as it makes it more plausible for them to relate to each other since they've experienced the same amount of life relatively.

They don't fetishize it usually but it's kinda played out in the anime like they're the same age range. They have the interactions of same age friends, the bench scene where Narancia walks in on them, Ghiaccio fight, Kraftwerk fight, and of course the final fight which really is what people use to cement their relationship so they usually just treat it as though they're the same age.

I think Mountain Tim is just another nuanced example, but not for the same reasons as something like giomis. Quite literally, it's just the time period. You can't have good-intentioned affection for someone that young today because you are aware of the standards of society, it would be inherently disingenuous. For 1890? Not so much. Things were a lot more loose back then, and I genuinely believe MT just didn't see anything wrong in an age difference like that. At the very least he wanted to protect her, and died instead of putting her in danger, which I think makes him honorable.

I just think many people had many different views on what was and wasn't acceptable. Ultimately I take Araki's intention into account. People back then had young wives, hell even people into the 70s did. That doesn't make it right, especially not by today's standards, but I don't think Tim was ill-intentioned in the way the Valentines or alt Diego were.
