I'm probably putting more thought than what the conversation is about, but I'll give my thoughts on why people enjoy Kakyoin so much.

Kakyoin as a narrative character from nothing but the source material isn't very much at first glance. However, there are small things revealed about him. Stuff like his funny quirk of licking cherries and his sassy attitude towards polnareff gives us hints into who he is.

Another crucial thing is that it's revealed that Kakyoin was truly lonely until he met the crusaders. Many people, especially the creatives in fandom circles can relate to being lonely and feeling like they have no one. It's something that people really relate and latch onto.

There is the argument that it would be much better to develop his character fully "on screen/paper", but this allows fandom, filled with artists with their own skills and way of seeing things into creating how they interpret them to be.
