you can view craft able weapons in “Collections” Menu under “Patterns and Catalysts” and there you can see all you can craft, you can get their patterns by getting weapons with red borders around them, and you can extract their patterns if you closely view them, once you get the required amount, craft it on the enclave on mars, level it up to 16 to get basically all of the rolls available and then reshape it at the same location with god rolls this time, and then yea, do it with whatever weapons you want, some you see are only available from banshee and xur on the weekends, and some no longer available i believe
