I picked up the game again and honestly ive just been upgrading my weapon with scroll of upgrade and just been getting strength potions I use the transmission scroll on my weapon when i wanna change it (ive gotten up too boss 3 though and idk what im doing but it works for me)

I assume u playing without challenges. Just attack him where goo is not in water and run away when he is charging an attack

A simple trick you can use: stay in a door, when the 2nd turn is spent of charge attack hide behind door to dodge it

The better way to do this is to find grass you can circle around to dodge the charge attack

the boss ability stops when you get out of its line of sight, so you better attack it near a corner, doorway, pillar, or running around grass.

you could also use bee 🐝 by throwing bee nest near it to distract it.

you could also use bombs 💣 if you find some.
