I feel like a dumbass, but I can't figure it out on my own and multiple searches here and on the forums haven't helped. In Edit-Campaign Properties-Token Properties, how do you rename a token type and get it to save? I can type in a new name for a token type, but no matter what I do it always reverts to what it was before. I can't find a "save" or "update" or "apply" button or anything. And the Copy option doesn't give me the option to name the copy, it just adds an @ to the end of the existing name. Is there a way to rename an existing token type, or do I need to create a new type with the name I want and then manually enter all the properties again?

I would strongly recommend against renaming an existing token type. Bad, bad things can happen from doing that.
As far as I recall (it has been a few years since I've dealt with this, so I could be wrong), start by clicking "New" under the list of token types. Then name the new type and enter the properties. Once you have that done (or at least, usable) then click on "Update" before clicking on "OK". Using Update is what actually saves any changes you have made. The OK button saves some, but not all, changes.
You change the name then hit ENTER. It will warn you that it will change all existing tokens with that type that they will be updated to new type.
