I went through the accending cutscene and credits but it just,,, doesnt show that I ascended? Monk save file btw, I’ve restarted the game but it just shows my last shelter , please help!

If you haven't tried simply doing it again, give that a go. If that doesn't work, since you're on steam I think you can do something to verify files which could help maybe. I don't know how you do it, I play on console, but it seems to be a solution for various problems, just ask around for the specific instructions.
If nothing seems to work... well, monk does actually have 2 endings (every scug has!) So you could try getting the other one. The second ending requires completing gourmand's campaign first however.
Actually, that would also be a good opportunity to see if gourmand's ending art shows up or is similarly missing.

this is stressing me out so bad my ocd is going haywire i just want it to show that i finished the game i dont want to restart ive spent 27 hour on this save (7 hours of my not dying)

verifying disables all mods which will either break something 
or let you go for it again completely unimpeded

I've had a thought of something you could test.
Go to arena mode and flip to the challenges section. There are a few challenges for each scug that you can only see after finishing their campaign. If you can see the monk challenges with the yellow outline, that means the game recognises you finished it and only the art is broken. If you can't see them, that probably means something is off with the save file unfortunately : (
I feel you on the ocd thing hah. My expedition menu is currently glitched to not show some checkmarks for missions I've already done and I very much would like it to be neat and complete too

Yes seems like they're unlocked, that's good news. Though honestly I'm not entirely sure if the main 3 scugs have their challenges unlocked by default, since it also has surv's and hunter's unlocked too. If you haven't actually finished those campaigns I guess this info means nothing at all unfortunately
