I'll try to jump when I'm at the spot, and it will either take a second and then I'll barely be close enough to grab the side of what I'm jumping to, or I'll just hold on until I completely stop, and fall (with most stamina bar) when trying to jump from one platform to another, I've gotten past most quest locations despite this with the hook kicks, but it's a HUGE issue in other areas or quests

Hey, it’s mostly timing + momentum in Dying Light.
If you release too late, the hook can hold you and kill your momentum so you fall. Also if you arrive too low or at a bad angle, it won’t auto grab the ledge.

Try releasing a bit earlier while you still have speed, then jump and aim slightly above the platform instead of directly at it.
