Another way is to just keep on doing New Game+. The story missions are by far the easiest to keep doing and it'll reset all the challenges so you can keep doing those for exp too

my suggestion for the volatile shotgun bounty: go to a dark hollow and shoot one in the legs thru a doorway with boards agsinst it. if you damage it with anything other than a shotgun, the bounty will not count (you cant slash it to almost dead and finish it off with a shotgun)
