Theres actually a pretty easy explanation - typically wind picks up dirt and seeds and stuff and carries it through the air, the roofs gradually filled with dirt and eventually would sprout grass and other flora. It makes sense with the size of the trees, they aren't too big. Also people could bag up dirt and move it onto a roof.
