That's because you are playing the game very wrong. You are forcing yourself into unwinnable fights from what I've read from your messages. You try to follow the "gid gud movement" You are not a souls veteran, you need to take it slowly, do not take challenges that you find unfair. The game gives you so much freedom in exploring and leveling up before you even attempt the first story boss.

Find yourself a free day and I'll teach you all the basics for the game and you'll see just how much that opens the doors for you
