So far I’ve not encountered a single side quest that feels like any other one

I recommend that you go through their entire moveset and examine their design closely because a beloved weapon does not always deal the most damage

But if you wanna minmax then when in equipment press the key to view more details and then press F to switch it to the page that shows you damage on right hand so you can see the combined total instead of base + scaling

makes it easier to find out which one is the best

but from 500h of experience I need to tell you something important which does not necessarily apply to straight swords but if you find yourself using a longer weapon keep in mind that some attacks might be broken or the weapon can be otherwise just bad. For example I was fighting a very aggressive boss with a very slow swinging weapon and I could not get a lot of hits in because there were only a few windows I could fit a whole swing in. But then I switched to another weapon that swung a lot faster and it let me damage the boss after almost every roll and I had time to roll again before they attacked the next time. It really depends on how you want to play and it doesn't hurt to change to adapt to a certain enemy when in a certain area or fight.
Then the point about broken attacks. There is a weapon that looks cool as fuck it's called the Black Knight Greataxe. But it has one massive problem which is the sprinting attack sometimes never meets its target because it clangs against the ground on certain kind of terrain or when there are obstacles. It's a really shitty case because you could easily make use of the attack, except the weapon just clips inside the ground and bangs against it and cancels your whole swing.

this is just an example

also pve balance does not translate to pvp most of the time

in terms of which weapons are useful

that's another world of choosing wisely...
