The design of RDR2 isnt even in the same realm of AC Odyssey. Ubisofts intention is too make very high value games with tons of stuff for you to do everywhere. It's hard to see you getting overwhelmed with RDR2, the game is much slower and the open world design is more exploration focused with a hint of rockstars classic sandbox elements

If you find that stuff really boring then yeah it will bore you. But it's also optional, you never have to loot anything if you don't want too
There's a lot of stuff like this though, every animation is slow and realistic. Arthur and the horses feel heavy to control, it's all to build immersive cohesion between you and the world, it's very effective if you just let it take you... Even if you hate this stuff the narrative is still very worth it

Souls games by their nature are difficult yes but they aren't designed with the sole purpose of being hard. Being hard is a biproduct of the way you play, same with being easy
That's why these games are genius. Difficulty isn't a option in a pause menu. Difficulty is an item, a playstyle, a build, a starting class, a weapon, a case of asking your friends for help with a boss, etc, etc.
You should be allowed to be completely op if you want too, and you should be allowed to be a level 1 wretch gigachad that beats the whole game with a stick
