All I got to tell you is that each of the title differs greatly with two titles sharing the same graphics/engine (Fallout/Fallout 2, Fallout 3/Fallout New Vegas, Fallout 4/Fallout 76).
While I began with Fallout 4 which marked my overall introduction to the series, I'd say it be up to you to decide which game you'd want to go first.

The first Fallout games are classics (meaning old, from like nineties) on an isometric plane.
Fallout 3/New Vegas/4 and 76 are all three dimensional. Fallout 3 and New Vegas are a bit old too but they have been made in the late two-thousand's. While 4/76 been made in the late twenty-tens.

Fallout New Vegas has some bits of modifying with weapons.

Fallout 4 and 76 have expanded on that and on top of being able to customise your gear and arsenal, you can also create settlements/C.A.M.P.s but that last one has different rules to it.

Also Power Armour is much different in Fallout 4 and 76 which isn't like the rest of the armours from previous titles (you'll see why) but its own thing which makes it 'feel' and perform like an actual power suit.

So here's just a note of what you could be expecting from each title, but like I said, the choice of which one you'd like to start with is completely up to you.

Since I'm a guy who likes customisation, while I am quite biased on that, I do like Fallout 4. But I had played a bit of New Vegas to also appreciate it for its story.

Oh yeah, the most common opinion surrounding Fallout is that New Vegas is the best in the series, especially in the writing department, whereas Fallout 4 has the weakest.
