we have shell scripts that handle it automatically when /stop is ran.
/stop, its waits 5 seconds so you can ctrl-C if you are doing backend work, if no commands are sent it runs the startup script automatically.
With that we are able to simply schedule a "stop" periodically throughout the day

A YT doesn't contact the owner regarding the store and will ruins the entire server and unbalance/break it + they have no idea if the owner can rollback it or not
Mojang actually handles this in a good way, by emailing the server and make the server uncontactable by a normal client without any damage
