For example would 1 server instance with 40 players be more or less cpu intensive than 4 server instances with 10 players each, assuming they were all on the same machine? In both scenarios you have 40 players on your "server" but they are handled in different ways.

A lot of it isn't.
But anyway, you can't lock Java to a single core. That's up to the OS scheduler.

FYI I put in some data rendering fixes to timings last night, fixed some NaN's and such. but also confirmed with 100% confidence the "misattributed timings" issue is NOT on the front end if it is an issue, it is from the server, as the raw data lines up exactly with whats rendered.
