I have started on this other series. It's something like 24 books, and it's all about a fictional West Virginia town from the year 2000 getting transplanted in southern Thuringia in 1631. Needless to say, it's, um, interesting, and I've only read the first two books. If that's too much of a sell, the first book is a pretty good read by itself. It's called 1632, part of the Ring of Fire series. Beware, lots of Alien Space Bats lurk inside, but even then the scenario is pretty damn interesting.

I'm not entirely certain how one leverages DataWatchers, but it might be something that the client isn't being sent.

I haven't tried any of that, I think generally speaking custom entities require mods/resource packs. If you just want to change visuals to one that's already defined, I'm not sure how that works for animation, collision, pathfinding, etc.
