I think they just have a supplier to make them, and probably work with manufacturers to make sure they work with their products.

extension cables just follow ATX spec, so that's easy. but cablemod is basically endorsed by PSU manufacturers to make replacement cables too.

🤷♂️ flex is softer and more flexible. modmesh is stiffer but more vibrant colours.

id pick flex if you're cramped for space. mesh is stiffer, but can def be trained to hold their shape the way you want with some light handbending.
so probably mesh for your needs? but I don't own either, so cant really give the best advice here. just reading cablemods descriptions atm.
