So, a few main things make me think tk has a will/emotions.

First point : winged nosk
Nosk is a creature that takes the shapes of a victim’s close ones. Their siblings, SO’s, etc. in the main game Nosk just takes tk’s form, which make sense given the supposedly emotionlessness of a vessel. But in godhome, nosk takes the form of hornet. This to me indicates that tk, upon learning hornet is a sibling as well as just getting to know her (she did save them in the cast-off shell after all), that perhaps tk might consider hornet close enough for nosk to take her form.

Second point : delicate flower
You can give the delicate flower to those outside of the main quest, such as elderbug, which from an in-universe perspective doesn’t make sense. Why would tk, an emotionless being, diverge from their set goal to give a flower to a person for little other reason than sentimental feelings? The main flower quest also challenges tk’s supposed emotionlessness. There’s not much to indicate that ze’mer would give a mask shard, and the quest is otherwise presented as just fulfilling relationship stuff.

Third point : voidheart
The voidheart charm outright says that it unites the void under the bearer’s will. So much for no will to break. The voidheart choice is also significant because hornet a few times prompts tk with a choice. To leave hallownest in stasis, or to face the heart of the infection. From an in universe perspective, this would be a conscious choice tk would have to make after looking at all of hallownest and forming their opinion on what to do.

Conclusion : although the Knight has no means to truly communicate it, I think that their actions and potential actions from an in-universe perspective shows that have the capability to form emotions, will, bonds, and opinions. It’s also not hard to believe that tk could have these qualities because vessels are known to be “imperfect”, that’s the whole start of the plot. Even if white lady says tk is free from blemish, we have no reason to believe she couldn’t be wrong again. Even the pale king, a being with foresight, could not detect THK’s impurities.
