But aside from the mechanics I think presentation wise From have perfected their boss-making skills in this game

in DS3 i can time my rolls to dodge certain attacks to retaliate and do a bit of chip damage, its cool when you get these "oh wow i can do damage during these attack" moments like how you learn to damage NKG when he does the uppercut, flame pillar and diagonal down dive

in ER i NEVER feel safe to retaliate because their combos linger way too long to effectively dodge through all of it OR i know theyre gonna do an annoying quick retaliation attack that made all my dodges worth for nothing

in ER its
boss does 7 hit combo > you get in and poke him once > he may or may not do an extended retaliation attack > boss does another 4-7 hit combo > you get in and poke him once
