I personally enjoyed dark souls 3 the most boss design wise, ds1 had great level design... at first... and gets some props for starting the series. Elden ring is really quite good but it suffers from crappy filler side content and copy and pasted bosses, could have had less side dungeons and have them be of a higher quality (though theres a few great ones like that one that fucks with your head)
