There are two main factors; progression and subjective skill. You can beat the Unravelled relatively early if you get the key from Songclave and get Clawline to then get the Surgeons key immediately. Some players may not even have had more than five masks by then.
You also may be just good. People claiming Silksong to be easy are just good without realizing it.

Most games similar to hollow knight would fall into the metroidvania genre, but metroidvanias are generally defined from my understanding by having you slowly unlock more and more abilities that have give you access to new parts of the world.

I disagree. Silksong has MANY alternate ways if you look right, people just don't do that and then complain about it. Silksong also has better methods of guiding the player without doing an AAA and giving you shitty markers and "I think we need to go to XYZ" every five fucking seconds. You know you have to go to the citadel, so you already have a direction (up). But you also see all these pilgrims travelling certain paths, furthermore showing where to go.

I like that you can choose between last judge and phantom and multiple paths but its still not as good as in hollow knight where you can progress in alot ways you can even skip false knight and go via deepnest

Quests are the somewhat same as in Hollow Knight. The difference is that they actually help you where to go, they don't just say stuff like "I need pale ore" and let you have to search every part of the map. If you don't like quests, just complete them before taking the wish (often it is possible).

However most players don't have the same experience as in HK, for Act3 is far more depressing, hard and overall late-game.
