Anyways to actually contribute to the discussion. I feel like it's ultimately more important for bosses to hold a level of mandatory adaptability as opposed to a larger quantity of attacks. Regardless of how many attacks a boss has, it feels largely irrelevent if the methods to dodge them are simple and require no amount of adjustment from the player.
GPZ doesn't have that many attacks, but feels good to fight because he forces the player to adjust on the fly. With the same telegraph, you need to except and then deal with either the flail attack or a trip shockwave. NKG gets boring fast because despite the number of attacks, the method is the exact same for each one. NKG's location is always fixed. The telegraph is always uniquely identifiable. You can predict exactly what NKG will do and that gets boring quite quick
