This channel has too many tool haters, my bad. I get what you dislike, it's pretty annoying for fighter-type bosses to constantly do contact damage. However I think that the Witch crest might also require you to heal above the boss, as a sort of security messure.
The first clip seems to just come from the fact that Karmelita can't teleport. If she didn't do the step thing, she'd probably stop the fluidity of the fight (since she would require an attack to get out otherwise, which would be wasted most times, since it doesn't hit the player).
