1 reason is I just don't think a prequel would be as satisfying narratively. I would rather continue the story than just go back in time.

In terms of actual reasoning, I don't think it would make sense for Hornet to have been kidnapped from Hallownest where she was born, then saved a different kingdom, Pharloom, then somehow found her way back to Hallownest afterward. I think it makes more sense that Hollow Knight ends, Hornet gets captured, taken to Pharloom, saves it and stays there rather than returning to a dead kingdom she no longer has reason to protect.
