I think we might see the Hollow Knight again in Silksong and maybe this plushie is based on that version I mean we have already received a lot of different official Silksong merch even though the game is not out yet, that way Silksong would most likely follow the God Home ending which would explain why we are no longer in Hallownest since it most likely got destroyed by the Shadelord. (Or there is another reason and the Shadelord died to the flower)
The hollow knight who is still alive in this ending could've used soul or void to regenerate its arm again after its conversation or fight with Hornet.
The crack in its shell still being there makes also sense since the Knight can also heal his wounds but not his shell. When it cracks the Knight dies.
