Hard to tell, in game development things can go wrong in spectacular ways. My personal fear if i were in their shoes would be hard to repro bugs that impact the players experience severely like conditional blockers, edgecase permutations that can break saves etc. Now that this time around there will be a high volume of folks playing the game on launch these type of bugs will be pop out alot more frequently then their own play test teams encounter em. So I can see why they need more time to ensure things are as smooth as possible.
