Deepnest is very hard to explore. Have you even explored city of tears?

Grimm has easily avoidable attacks. Though 3 of them can catch off guard
1- thorns, simply move away if it is below you. If it is not stand still. Do not try to attack grimm before he finishes that attack as you would be recoiled back to the spikes and get hit.
2- uppercut, first attack is easy to avoid. If you see the flame coming at you walk away from it
3- pufferfish, his hardest attack, you need to time your movement, small and big jumps

You can also use nailarts if you wish

I think as a beginner, if you beat mantis lords super early, because they're easy to find; you see the lantern in sly's shop, grind geo for it, you can go into deepest before city. Though it's unlikely that people skip the city crest route.
