"unpredictable" bosses are the hardest because they're not unpredictable, they are just really really hard.
Normally with 9hp to tank you're not forced to bother learning the fight, you can just tank through and get lucky to just not get too many difficult patterns.
Bosses like NKG and PV force you to learn no matter what, so coming into radiant you're overly prepared.
Meanwhile coming into radiant Markoth people are used to just tanking and getting lucky, so when both options are out the window you're forced to learn something you think you know and you think you can't learn, this leads to annoyance and to just blame the boss.

Hitting his armour will reset his stagger time but won't do damage to him, so dream nail him and hit his armor to keep him permanantely staggered. When you have full soul, feel free to hit him normally to get him out of the stagger and just spam him with spells (The reason you wanna use shaman stone) repeat untill you literally win with minimal effort.

This fight is significantly less luck based than it seems at first glance.
The Oblobbles will fly around the arena diagonally, starting towards a random direction. They will change direction when hitting a wall, floor, roof, or the other Oblobble, in which case they will bounce off; or if you hit them with any attack they’ll move to head the direction they were hit from. They will not change direction when attacking, and they will not bounce if you push one of them into the other.
They also have a consistent attack pattern, shooting 4 projectiles at once at 90° angles, you can picture this as if they shot in addition sign, but the addition sign rotates slightly as they shoot, about 50°, which you can also visualize as rotating it to an x and a bit more. Once shot the projectiles will curve with gravity. This means that none of the individual Oblobbles will shoot in the same exact spot twice in a row. Be mindful of where the projectiles land on the ground, then try to follow those spots.
Your goal at the start of the fight should be to get on one side of both of the Oblobbles. This makes it a lot easier to dodge their attacks, and lets you Shade Soul both of them with one Shade Soul if they line up well, as long as you don’t shoot while close to them, Shade Soul will double hit more often than not.
Basically, get them on one side of you, then dodge the projectiles, attack with Shade Soul, Dash Slash, or any other Nail Art of just Nail Slashes, and repeat.
Once one of Oblobbles is killed, it will heal 200 HP up to 750, not exceeding past its starting health. So from this stem 2 strategies.
Barrage down the first Oblobble as soon as possible to get to the second phase and reduce the healing.
Whittle down both Oblobbles equally to make phase 2 last the least possible.
Which one you want to do will depend on which phase you’re most comfortable with, the double attacks or the faster pace. Most people prefer the second option, but try to stick with one of them.
