The double hit thing is not really an issue most of the time, you'll mostly see that in modded bosses where people use thorns as an active challenge, but in vanilla bosses are slow enough and iframes long enough you can still relocate to a degree.
The real issue is the fact thorns locks you into always counterattacking, removing other options on how to spend your iframes, and the counter it provides is worse than one you could do yourself
