How this took place, who was involved, and the timeline of events is unknown, but it ended with the creation of the blasted steps and the loss of water in the region. The loss of water could’ve occurred during this war or afterwards

Firstly his dynasty’s collapse is much more clearly connected to Karak drying up (which happened while the Citadel were in power) than to any outright military defeat. Your claim is that he went to war with GMS but she was sealed before the war reached its resolution and he stopped attacking the Citadel after that for whatever reason only to die when they dried up the water generations later.
As I already said, while he could have resisted GMS and still fallen while the Citadel remained intact (those ideas aren’t contradictory) the “pale light” can just as easily refer to the Citadel itself, and without stronger evidence there’s no reason to assume a war on that scale even happened.
Resisting the pale light also doesn’t mean that he was directly fighting her, especially since the game treats the Citadel as an extension of her rule even when it’s acting to contain or seal her. All it means is that Karak attempted to resist her influence
And lastly it doesn’t actually matter when Karak fell as the game almost explicitly tells us, the whole point is that it fell as a downstream effect of GMS/the Citadel’s actions in the same vein as Verdania etc so having there be a massive war that’s just never mentioned anywhere is a bit tenuous
