With all the outages happening and the events games and quests being only able to be done once a day a few millitians were asking if the aniversary event will be extended so millitians can actually complete whole weeks? I know myself am a few days behind because of irl work and the outages happening on my time off. So I'm worried we won't be able to fully complete the event

If you mean the "do an anniversary minigame + deliver soft parchment/quill" daily, you should know that the week afterwards will enable a 'catch up' quest where you can do 2 part time jobs to make up for lost days.
The stamp quest dailies for the anniversary can be done at any time, you just miss out on the x2 rewards if you don't do the quest the day it unlocks.
