Debone it, by using a bone saw and going into the middle of the jaw. Saying the jaw is already removed. Slice off the muscles, skin and tissue. Usually I'd remove the skin, and leave the meat. I'd fry it tbh, so cut it up into thin slices, dip it in egg, flour, then bread crumbs. Heat up some oil in a pan and fry it for about 5 minutes
