most people (including me) dont have relative pitch so unless you know exactly the note you are trying to replicate on the spot, looking at the pitch chart isnt really going to help and the best guide for you is going to be your hearing (which to your methodology is a "trust me bro" but your ear is very reliable when it comes to match the note you hear)

at the start, it should sound dissonant/wrong but at the end the closer you get to the note (which you hit the note, nobody can hit it flatly like a robot) it sounds equal/phase to the piano note.... if you look up vocal warmups video, you will be able to map your singing voice to the notes on the video.
it is critical you use hearing because at the start you will use your hearing to learn songs, not sheet music / pitch graphs because 1. it's less convenient, 2. you don't know sheet music / music theory..... at some point it will become natural to hit notes and you will be able to sing your favorite songs but it's just practice
