Is the gamma function actually the factorial?
Is gamma(n) actually (n-1)!
?

Is (1/2)! actually sqrt(pi)/2 or we just interpret it as gamma(3/2)

$\Gamma(n) = (n-1)!$ if $n$ is a positive integer, yes

i wouldn't really think of $(1/2)!$ as being a mathematically meaningful expression other than possibly being a shorthand for $\Gamma(3/2)$
