I usually recommend that people build a classifier as their first ML project, using some simple CSV data like the Titanic dataset.

How long do you have to do this?

I can't imagine that you'll have enough time to learn enough about ML to be particularly capable as an ML engineer, so if this referral situation is serious, they must expect to have you do some on the job learning.
