Isn't really a python question, but iirc it can all be done using just an esp32, albeit if you want all of the same features i.e. the switch, graphs, etc you'd need to have more parts

Not really, but I'd imagine if a youtuber like low level learning, or even the Youtube in the video you linked has a discord there's probably someone who can help.

But if you literally just want to make a wifi deauther, you can just use a esp32, and (while I forget the name of the project) there is a project which adds a whole web interface to do a bunch of things related to wifi, including deauthers
