Kind of butchers any ability to have relative pitch as well

But if you have that, as well as rhythm matching (I guess you would call it) you can learn any song just by ear

I mean don't take my word for it though. There's this dude with amazing relative pitch named Frank Tedesco who streams on Twitch. He will answer any questions you have about it. He's good because he's been doing it for like 15 years.

I think it's easier to develop in childhood (as many things are) but it's still possible for an adult.

But what I mean is that the stuff I learned in school about the V chord resolves to the I chord and stuff, I don’t see it being that useful

What is useful is the more fundamental theory about tendency tones, like the 7th note and the 4th note of a major scale resolve to 8 and 3

If you hold down a C note on a piano and then an F note, you can just hear that the F is trying to go down to E

Idk maybe even that you could just figure out without theory
