"vegan" will be understood by any French person, at least working at a restaurant
to clear out any confusion, make sure to pronounce it with a /e/ and a /a/ vowels, not with /i/ and /ə/

"a table for 4 people" is "une table pour 4 (personnes)"
"je voudrais" is for polite requests, close to "I would like"
other translations work, like "on peut avoir" (can we have) or "est-ce qu'il y a" (is there) for instance

The French word for vegan is végétalien but I agree with Flynn about vegan being common enough in the food industry. Also, vegetaLien is awfully close to vegetaRien in terms of pronunciation for a foreigner..

Side note: “une table pour 4, s’il vous plaît” works too afaik
