the traditional rule was to keep the masculine article for prestigious professions, like writing Madame le maire. It was very strict like that for a long time, but it has changed recently, it's not even recognised by the french academy anymore.

if you are writing a formal letter to a female mayor today, you write Madame la maire. You drop the le. And when a profession has an actual feminine version, like you mentioned with procureure or editrice, you use it with the feminine article. So you would start your letter with "Madame la procureure" or "Madame l'editrice". You do not revert back to the masculine le at all, or else you would sound wrong or very outdated.
