conjugation is the act of changing the form of your verb based on who's doing the action, and how the action is performed.
Let me use English as an example.
"I am home" is a fine sentence, but let's try changing who's doing the action
"he is home" the same sentence with another subject causes the verb to change.
"I was home" still the same action, but now it's past tense, the verb changes again

same thing for many verbs: I eat/he eats/I ate, etc

The same thing is happening in French
"Je choisis" is one person doing the action
"Vous choisissez" you're changing who's doing the action, you have to change the verb as well
