Dying Light! Skyrim is supposed to be pretty good too
Zelda BotW & TotK both have good dubs but the speaking portions are few and far between
The original Oblivion has a French dub, though Remastered does not, for some reason. There are mods that re-add it.
I second Skyrim.
The Dishonored series is both great fun to play and also fully dubbed, starting from the first one:
I mean any high budget game should be fine
(i don't use French dub so i can't tell you)
If in doubt, check the Steam page. It'll show which languages are available, and in what capacity.
Sadly, Elden Ring has everything but dubs.

I'm interested in the game being made with initial french high quality work linguistically speaking. Something that couldn't be said in english, sounding fluent
The dubs for most large titles are professionally done and linguistically accurate.
It's not about accuracy, it's about authenticity. E.g:
A good example of russian localised game are Warhammer 40.000: Rogue Trader and The Witcher 3. They are not originally that way, but as a native I can confirm the work is tremendous - they adapted religion related matters and various phrases
Good german ones are Gothic series and Wolfenstein (from Bethesda at least)
French as I have found so far are Clair Obscur: Expedition 33, AC: Unity, Jusant and Dordogne
And for instance, various languages are present in good condition in Helldivers 2 too, but... Hearing so many times "Freireit" in german localisation and other phrases that are just obviously somewhat made up is... Off. You hardly would hear such phrases from a german speaking person, however hearing about "Give me liberty or give me death" is perfectly normal from an american and is on point
I have yet to experience anything sounding 'made up'. The games I mentioned are authentic. Meanings, nuance, and expressions are all translated instead of kept the same.

I played dishonored 1-2 and TES Oblivion-Skyrim on russian, german and english languages, and truth be told - they are almost identical one-to-one translations made by corporate request, no spark of interest from translators or creativity

I have noticed that of recent indie games are made with much more investment and passion rather than Ubisoft or majority of EA releases

It's true. But I'm not looking just for simple translation, all of them support english regardless
I've been told by French native speakers that the skyrim & dying light dub were done incredibly well, and french people are pretty well known for critiquing things
Oh yeah i did play Skyrim in French at first and when i switched to English i almost liked it less
Same for dying light lol i prefer the french dub to english
And it's a very accessible game if you don't crank the difficulty, very chill
The second dying light does have a translation issue but it's in the text not the dub

Not a game but the dub for vinland saga was top notch, another one I prefer to the english dub
