bon = adjective (but rarely an adverb)
bien = adverb (but rarely an adjective)

bien can be used like "well" is used in English
"Well, I thought he'd be there…"
"Bien, je pensais qu'il serait là…"

bon can also be used sort of like "well" (or sorta like "hey") and it generally expresses exasperation
"Hey, that's enough!"
"Bon, ça suffit !"

also, "quessé" is dialectical and not used in the variety of French I speak, but I don't believe you can form a question with it the way you have

So when you use it before a sentence, you usually use bien? you only use bon if its like negative?

I know that it's québécois, the issue is that I don't believe it would be used there to form that type of question

quessé is "qu'est-ce que" pronounced in dialect
qu'est-ce que should be followed by a clause, not just a noun
