#What is the difference between "Gentil garçon", "Doux garçon", "Tu es un amour", and "Tu es chou"?

Are there differences depending on who you say it to? I read that 'doux garçon' doesn't sound natural and is used in fairy tales, while 'tu es chou' is said to kids, not adults. Is that true, or did I misunderstand something?
