It can be either deuxième or second.
Normally you would use second if there aren't more than two options and deuxième otherwise.
what do you mean by more than 2 choices?
There are two world wars, right? WW2 is called Seconde guerre mondiale in French since there still isn't a third one. But you can hear people use deuxième instead of seconde here.

Yep. That said, people may use deuxième even when there are only two of them.
For WW1, c'est Première Guerre mondiale. Also called Grande Guerre.

childhood/adolescence is the first and adulthood is the second
The age division goes back to ancient times. The first age includes infancy, childhood and teen life, the second age is about the adult life and lastly the third age refers to the seniority (from age 60).
