You can use both to say quickly

You may also use "vite" as an interjection, if you want someone to hurry, but not rapide

"Vite ! Nous devons sortir" = Quick ! We have to get out

Note that outside of Quebec, vite is normally only used as an adverb and not an adjectif

The difference will be between vitesse and rapidité, vitesse designates the speed, while rapidité is used to say that something is quick.
