you can notice it because of "se" in the base form
it requires the use of a reflexive pronoun to work, which has to match the subject
because the subject is "je", the macthing reflexive subject is "me"

"que" is the inverted form for questions using inversion

On n'a pas répondu à la question initiale...
Coucher est un verbe transitif et veut dire "mettre/allonger au lit". Il requiert donc un objet.
Si le sujet et l'objet du verbe donné désignent la même personne, on utilise un pronom réflexif pour exprimer une action faite sur soi-même.
Donc : je couche quelqu'un => je couche moi (ceci ne se dit pas mais c'est pour illustrer le passage du verbe normal au verbe pronominal) => je me couche

Consider the following:

Je te couche
I lay you down
vs
Je me couche
I lay myself down (I lie down)
Without the reflexive pronoun you can't be sure to whom the action is applied.

I just want to note that while some pronominal verbs could be considered a reflexive action (done to oneself), it's not always the case. Some indicate a reciprocal action (multiple people doing the action to each other), or something entirely different
