In French it's completely possible to say "you speak what languages' and then add a question mark to make it a question
It's a casual way to ask questions, if you wanna use the word order of "what languages do you speak" you have two options

Quelles langues parles-tu
Here, you make use of l'inversion which is formal -
Quelles langues est-ce que tu parles ?
Or you just use est-ce que which is more neutral
- Quelles langues parles-tu ? → Inversion, the most formal way to ask a question
- Quelles langues est-ce que tu parles ? → Est-ce que question formation, neutral
- Tu parles quelles langues ? → Simply keeping declarative sentence structure, but with rising intonation, informal way to ask questions
- Quelles langues tu parles ? → Sorta a mixture between inversion and intonation, this is not treated as "classically" correct, but is soemthing you can hear in very informal situations.
