In which cases for example ?

better not to think of it in terms of translations from english
Je vais means i go
Je suis means i am
We use the verb " aller " for the tense " le futur proche " maybe you saw a sentence with that and that confused you.
je vais bien = I'm doing well
you wouldn't ask how you know when to use do vs is in english, would you?
Je vais manger après une heure for example, it means im going to eat i hour later

Sometimes a word doesnt have a single meaning, they may have multiple used with different constructions
