"I thought I had a week left before the start of classes" is that what you’re trying to say?
As for your sentence "je pensais que j’ai une semaine", I would change j’ai to j’avais just to match the tenses
With the verb penser, if the subject is the same, you can just follow it up with an infinitive
Je pensais avoir une semaine avant XYZ
If you add another clause, the tense needs to match because of concordance des temps
je pensais qu'il avait une semaine avant XYZ
je pense que j'aurai une semaine
becomes
je pensais que j'aurais une semaine
no?
but the infinitive solution is fine too
